
Ingredients:
1 Cup of unsalted butter
2/3 cup packed brown sugar
¾ cup almond flour
¼ tsp salt
1 Tbsp of light corn syrup
1 tsp vanilla extract
Directions:
- Melt butter in a medium sauce pan on low heat until melted.
- Add the brown sugar, almond flour, salt, and corn syrup. Whisk while still on the stove until the sugar is dissolved. Takes about 5 mins.
- Remove from heat and whisk in the vanilla extract. Allow the mixture to sit and thicken for 5-10 mins. While it sits, preheat the oven to 350 degrees F and line baking sheet with parchment paper or a silicone baking sheet.
- Drop small teaspoonfuls (the batter will spread) 3 inches apart onto the baking sheet. Bake for 5-7 minutes until golden brown, rotating pan hallway through.
- Allow cookies to cool for 5 minutes on baking sheets, then transfer to a cooling rack to cool completely. Enjoy!
