My name is Erin, and I was diagnosed with Celiac’s Disease in May 2026. I had heard of the diseased before, but never thought I would actually have it. Growing up, I loved food. I was probably the least picky eater you would ever meet. I would bake with my mom all the time, too. When I moved out, I continued baking on my own as a hobby/stress relief. My mom passed in 2025 and baking became even more important to me. It was a way for me to feel closer to her. Then, BAM, I found out that I couldn’t have gluten anymore right before mom’s first birthday with her gone. I felt like the rug was pulled from under me. I had to deep clean my kitchen and get rid of my 2 year old sourdough starter. I gave most of my not-so-safe ingredients to friends and family, and was left with a bare pantry. Living in New Orleans, having to eat and shop gluten free is definitely not easy. I started writing my experiences to keep track of what made me feel good, not good, and recipes I’ve tried. I told a few people about my writing, and everyone suggested that I start a blog. Not only to help myself, but to possibly help others, too, that are going through the same experience. So, here I am!
